Cubic metre charges:
Yorkshire Supply 118p
Yorkshire sewage 141.9p
Severn trent supply 152.2p
Severn trent drainage 92.2p
At first glance this appears to be fair it's less fair for the people of Chesterfield who pay the Severn trent supply rates but the Yorkshire sewage rates. So if you live east of Bolsover or south of Tupton you'll pay a lot less.

Is there a reason for that?

Surely it's worth paying a bit more to be able to dump your sh*t on Yorkshire? :D

Because water companies are private but unlike other utilites you do not have option to switch

Doesn't answer the question though, do we physically get our water supply from severn, and Yorkshire take our sewerage, how does that actually work, or has some beurocrat just drawn it up at random based upon boundires etc.

It's a physical thing not a straight line boundary. STW the billing authority but sewage at YW rates. Seems unfair to me that one can weight the bulk of costs on to supply Anne the other on disposal and addresses on border get highest of both when supply is metered and disposal a nominal percentage of that quantity. There is also an element of surface water drainage additional on the bill.
